Lingonberry jam can be a little difficult to find in the grocery store, but many specialty food stores carry it. If all else fails, you can order it on Walmart.com. You COULD substitute it with any old jam you have, but that takes away from the best part of these cookies. After all, anyone can use cherry, strawberry, or other common jam or preserve, but you’re making Super Awesome Super Unique Lingonberry Thumbprint Cookies, not Run-Of-The-Mill They’re Okay Thumbprint Cookies.
Ingredients:
1 3/4 cup all purpose flour
1/4 teaspoon salt
3/4 cup unsalted butter; softened
1/2 cup powdered sugar
1 tablespoon vanilla extract
Lingonberry Jam
Instructions:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Cream butter and sugar together in a stand mixer or in a bowl with hand mixer. Add in vanilla extract. While the mixer is going, add in salt and flour slowly. The dough will become crumbly but stick together when hand kneaded.
Pinch off roughly a tablespoon of the dough. Knead in the palm of your hand by squeezing, and then roll into a ball. Slowly press your thumb into the center and place on baking sheet 2 inches apart. Fill the indentation with lingonberry jam.
Bake for 12 to 14 minutes. Cookies will be pale. Transfer to wire rack to cool. Dust with powdered sugar, if desired. Store in airtight container. Makes about 18 cookies.

Lingonberry Thumbprint Cookies
A delicious twist on a classic holiday cookie. The Lingonberry gives these cookies a sweet and tart flavor that's sophisticated and slightly unexpected.
Ingredients
