I love a good dip. Heck, I love appetizers, and have to admit – sometimes, I don’t see the need for a main course. One of my favorite dips is Spinach & Artichoke dip, but it can be so heavy and bad for you. This version is much lighter in calories, yet still has a rich and satisfying taste and texture. One of the secrets is Progresso Recipe Starters.
Spinach Artichoke Dip
- 1 Can Progresso Garlic Recipe Starter
- 2 Tbsp Oil
- 1 Small onion, chopped fine
- 2 Cloves garlic, minced
- 1 10 oz frozen spinach
- 1 Can Artichoke hearts, drained. I used a package of frozen ones.
- ¼ Cup flour
- ¾ Cup Parmesan Cheese
- ¼ tsp. Chili Flakes
- Seasoned Salt and Pepper to taste
Heat the oil in a large pan. Add onion and garlic, cooking until soft.
In the meantime, put the flour, cheese and Chili Flakes in a bowl, mixing well. Add half of the Garlic Recipe starter and mix until smooth. Then stir in the rest until smooth.
After the onion is cooked, add the spinach, cook until hot throughout. Add the artichokes and heat through. Dump in the Garlic Starter/cheese mixture, cooking until thick. Season to taste.
I served mine in a hollowed out bread bowl. You may serve warm or at room temperature.
