You need just a few things to make the perfect whoopie pie. You definitely want to use a cookie scoop or small ice cream scoop. This ensures that your cookie portions will come out even and your sandwiches will be uniform. Also, it’s always a good idea to keep a few piping bags on hand to make the filling part easier.
Whoopie Pie Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 2 teaspoons allspice
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 1/2 sticks of softened butter
- 1/2 cup light brown sugar
- 1/2 cup buttermilk
- 1/2 cup molasses
- 1 egg
- Holiday sprinkles, optional
Frosting Ingredients:
- 2 sticks room temperature unsalted butter
- 4 cups confectioners sugar
- 1/2 cup room temperature cream cheese
- 1/4 cup half and half
- 1 teaspoon allspice

Step 1: In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, and ginger.
Step 2: In the bowl of a stand mixer, cream together the brown sugar and butter until light and fluffy. Slowly mix in the egg.
Step 3: Mix in the buttermilk and molasses to the butter mixture. Once incorporated, slowly add in the dry ingredients.
Step 4: Line a baking pan with parchment paper or a silicone baking mat.
Step 5: Using a spoon or ice cream scoop, drop 1” balls onto your baking pan. Bake at 350 degrees for 10-12 minutes or until they spring back. Cool on a wire baking rack.
Step 6: While the cookies are baking, beat together the cream cheese and butter for 1 minute or until light and fluffy.
Step 7: Add half of the creamer to the cream cheese mixture and slowly add in the confectioners’ sugar, 1/2 cup at a time until light and fluffy. If mixture is too thick, add more creamer, 1 tablespoon at a time. Add the allspice and incorporate completely.
Step 8: Pipe or spoon the cream cheese filling onto a whoopie pie cookie and top with a second cookie. Now you have Gingerbread Whoopie Pies with cream cheese filling! If desired, roll in holiday sprinkles.
