Recently, How Was Your Day? was invited to participate in an event celebrating the release of Made with Love: The Meals on Wheels Family Cookbook. Made with Love is a collection of recipes from celebrities including Martha Stewart, Mario Batali, and First Lady Barbara Bush, as well as people associated with Meals on Wheels.
We were asked to create a dish from the Made with Love cookbook. I love curry, and I love cauliflower. When I saw this Curry Cauliflower recipe, I just knew what it was that we were going to bring!
Curry Cauliflower Recipe
A delicious way to add some new flavors to your regular old veggies. This vegan friendly recipe is sure to be a hit with just about everyone.
Ingredients
- 1 medium Cauliflower
- 1 large diced onion
- 3 peeled and shredded carrots – {approx 1 cup}
- 4-5 TBSP Olive Oil
- 3 TBSP minced fresh garlic {approx 1 ½ TBSP dried garlic}
- 1 14-16 oz can diced tomatoes
- 2 TBSP Curry Powder
- ½ tsp Cumin
- Salt and pepper to taste
- Parsley or scallions {optional}
Instructions
- Wash and peel carrots. Trim ends. Shred on the fine end of the grater or with the fine blade of a food processor. Set aside.
- Wash and break cauliflower into medium sized florets. Set aside.
- Peel, wash, and chop onion to a medium dice.
- Add oil to pan over medium heat.
- Add onions and garlic to pan and stir occasionally.
- When onions start to turn golden, add cauliflower and toss to coat.
- Add curry, cumin, and season lightly with salt and pepper. Toss and cook for approximately 5 minutes. Cauliflower should just begin to soften.
- Add diced tomatoes and their juice to the pan, along with the carrots. Let simmer until the cauliflower is tender but not mushy.
- Adjust seasoning to taste, Garnish with chopped scallions or parsley and serve hot.

I like to eat. I love to try different kinds of food; we have potlucks at my office several times per year, and it’s so much fun to try everyone’s best dish. The Made With Love cookbook is a sort of ‘visual potluck’ where you can almost taste the different recipes just by reading about them and seeing the pictures of the finished dish. Each contributor also wrote a few lines telling why they contributed their recipe, so it almost seems like you’re sharing good food with friends.
The recipes are well written and beautifully photographed. Family favorites from every type of celebrity are included – from Mario Batali and Martha Stewart to Helen Mirren and Fran Drescher to Big Bird. Add in first ladies, governors, journalists and musicians, and you have a lot of good eating in this book!
Made With Love is a celebrity cookbook published to benefit the Meals On Wheels program. Meals On Wheels is the only national program dedicated to providing America’s senior citizens with daily meals. It doesn’t sound like all that much until you realize that there are 5,000 programs nationwide with more than 800,000 volunteers that provide more than a million (yes, that is a MILLION) meals daily to our nation’s seniors.
Some meals are served at local centers, others are delivered to shut-ins, that may have little contact with others. Their daily meals also serve as a safety check, and for some, this may be their only contact with others.
Meals On Wheels Association of America is a great organization that provides a much needed service for our senior population.
