January 6th was National Shortbread Day. I love shortbread cookies, and it's one of my favorite things about the holidays. I had planned to make a fantastic recipe of shortbread cookies and share it. i am so totally going to have to try those espresso chocolate shortbreat…wow! I like to use a basic shortbread as a base for a variety of christmas bars. add sweetened condensed milk and nnything you want for the top layer! shredded coconut and chocolate chips is amazing. or top it with a raisin filling like you would fill tarts with…my favorite!
